For over 20 years, we’ve worked inside the industry in nearly every role imaginable: from the line to executive chef, from budgeting and menu planning to promotions, social media, and visual execution. Like many in this industry, 60–65 hour work weeks were the norm, not the exception. When you put in that kind of time consistently, you don’t just think like an employee — you think like an owner.
